If you are planning on staying in/around Strip/Downtown Las Vegas only, not having a car might be the way to go; you don't have to worry about parking (often paying for the privelege, and finding it, remembering where you parked, and refraining from indulging in adult beverages). But if you want to head out to see Hoover Dam or Lake Mead or something, it might be worth/necessary to have a vehicle.
Even if you drive in, it might be worth keeping the car parked at hotel for your visit.
The "Strip" is actually about five miles along S Las Vegas Blvd, so bring your comfy walking shoes if you plan on hoofing it.
Monorail: From SLS to MGM Grand, the monorail accesses the east side of strip. Includes stops at Convention Center. 7 stops. (Pay service)
Aria Express Tram: Free tram from Bellagio to Aria/Monte Carlo.
Mandalay Bay Tram: Runs between Mandalay Bay, Luxor and Excalibur
(There's also a free tram between Mirage and Treasure Island)
RTC buses travel up and down Las Vegas Boulevard. (Note - there is no parking/stopping except for buses on LV Blvd in the Strip area) If you have a large group of people, you can get a small bus to move your group around.
Lyft and Uber are available all over town (including to and from the airport). Around the Strip and Downtown, there are lots of drivers, usually.
Airport pickup - there are dedicated areas in the parking structure for rideshare pickup. Follow the signs from gates/baggage claim. When requesting your ride, specify which terminal you are requesting your ride from. (You can be dropped off in front of airline drop off area.)
Check with your hotel, driver and/or rideshare app for pick up and drop off locations, as many casinos/hotels have specific areas that are the only places to pick up your ride.
As of 2019, there are set fares from the airport to different areas of the Strip and Downtown.
Remeber, the mileage and time rates in Las Vegas may not be the same as what you experience at home.

The main airport is McCarran International (LAS). Thirty domestic and international carriers serve the airport.
TNC (Transportation Network Companies, most commonly known are Lyft and Uber) pickups available (Terminal 1: Parking garage, level 2M; Terminal 3: Parking garage, lower level Valet). Also taxi, bus service and rental cars.
There is no rail service to Las Vegas. You can take Amtrak bus service or Greyhound to Las Vegas.
There are two bus stations: South Strip transfer bus terminal (closest to arena) and Las Vegas Bus Station (north end of downtown LV)

Doors open 90 minutes before games. Food, games and live entertainment are available outside the arena in Toshiba Plaza starting one hour before the doors open.Arena policies (on cameras, outside food, etc.)

RTC express bus service to arena. $2 each way per person. First bus leaves for arena about two hours before game; last bus leaves arena 45 minutes after game.
There are two stores run by the team. The Armory (10a-6p; extended hours during games, closes one hour after games) at the T-Mobile Arena and The Arsenal (10a-6p) at the City National Bank Arena (practice facility). (Hours subject to change without notice.)

Depends on how thick your wallet is, how far you want to travel, how much time you want to spend, and what you want to eat. Casinos usually have multiple eating establishments on casino property. Some have lavish buffets available. Many "chain"/franchise restaurants have representation in/near Las Vegas. There are also some fast food options around (including In-and-Out Burger, Sonic Drive-In, Smash Burger).

So, if you're coming for more than just the game, and have hours/days to fill, here are some ideas.
Golden Knights practices: The Golden Knights often have practices and game day warm up skates at the City National Arena in Summerlin (west side of valley). (Regular season practices are generally open to public.) Just because ice time is scheduled does not mean it will happen. The team is pretty good about announcing open practices (or cancellations) on their twitter feed 30 minutes to 3 hours in advance. There is a small area on the west side of practice rink that players meet fans (under 14) to sign autographs after practice.
